Roquefort and Chortais

Domaine Mercouri Chortais and Roquefort from the Baragnaudes Caves.

This pairing of Roquefort from the Baragnaudes caves with Chortais, a sweet Greek wine originating from Mantinia in the Peloponnese is rather novel. ‘I asked Olivier Poussier to surprise me,’ remembers Xavier Thuret. And our man was not disappointed. ‘Old grapes have been used to make this Chortais, or pretty much macerated sultanas. The wine is quite thick, almost syrupy, and hints of fruit and spices remain in the mouth for a long time. It completely envelopes the cheese, and suppresses and softens the velocity.’
